Ingredients (Makes 12 muffins)

  • 1 ½ cups cake flour (or oat flour for a gluten-free option)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar or coconut sugar
  • ½ cup WELL N WELL Cultured Almond Yoghurt (plain flavor)
  • ¼ cup olive oil or melted coconut oil
  • ½ cup oat milk or almond milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar (helps with fluffiness)
  • ½ cup blueberries, mashed banana, or grated apple (for natural sweetness)
  • ¼ cup chopped nuts or dairy-free chocolate chips (optional)

Method

  1. Preheat the oven to 180°C and line a muffin tray with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, mix the yoghurt, oil, milk, vanilla, and apple cider vinegar until smooth.
  4. Gently fold the wet ingredients into the dry ingredients. Stir until just combined—don’t overmix.
  5. Fold in your choice of fruit or add-ins, then spoon the batter into the muffin cups, filling each about ¾ full.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let them cool for a few minutes before enjoying with a cup of rooibos tea!
